Stuffed Pumpkin for Thanksgiving
Thanksgiving is a holiday that features a large sit-down dinner full of the fruits of the harvest season. A center-piece main dish seems most appropriate and my favorite is a stuffed pumpkin.
There are lots of wonderful recipes available for this dish. The one I use is from Anna Thomas' 1972 cookbook The Vegetarian Epicure.
If you want to try this and don't have access to this cookbook, do not despair. There are a few "variations" on the recipe available online.
Teal Anderson has the closest online version to the original recipe.
Food Allergy Kitchen has a great version with a garlic broth submitted by Chet Day.
Redacted Recipes has a version with quinoa instead of Arborio rice.
This recipe is a bit of work but is well worth it. Stuffed pumpkin has become a family tradition. There are, of course, many recipes available for stuffed pumpkins, some not vegetarian. You may have a pumpkin sitting on your front porch that is in need of cooking right now.
